Goat’s Cheese Stuffed Fillet

Serves 4

 

Ingredients:


  • 1kg beef fillet, cleaned
  • Salt and Pepper
  • 2 jars roasted red peppers
  • 10 basil leaves
  • 2 logs chevin
  • Butchers String
  • Olive oil

 

Method:

 

  1. Butterfly the beef fillet by cutting down the one side to open up the fillet.
  2. Season the inside and outside of the fillet thoroughly.
  3. Place the peppers down the length of the cut side then top with the basil leaves.
  4. Spread the chevin over the basil then fold the fillet closed.
  5. Tie the fillet to secure the filling then rub with olive oil.
  6. Place onto a got pan or grill and brown all over.
  7. Place into a 200C oven for 10 minutes then remove and leave to rest for the same amount of time.
  8. Slice to serve.
