Goat’s Cheese Stuffed Fillet
Serves 4
Ingredients:
- 1kg beef fillet, cleaned
- Salt and Pepper
- 2 jars roasted red peppers
- 10 basil leaves
- 2 logs chevin
- Butchers String
- Olive oil
Method:
- Butterfly the beef fillet by cutting down the one side to open up the fillet.
- Season the inside and outside of the fillet thoroughly.
- Place the peppers down the length of the cut side then top with the basil leaves.
- Spread the chevin over the basil then fold the fillet closed.
- Tie the fillet to secure the filling then rub with olive oil.
- Place onto a got pan or grill and brown all over.
- Place into a 200C oven for 10 minutes then remove and leave to rest for the same amount of time.
- Slice to serve.
