Grilled Sponge Cake With Flambéed Oranges

Serves 4

Ingredients:

  • 4 slices sponge cake
  • 2 Tbs butter
  • 4 Tbs Selati Demerara Sugar
  • 4 oranges, peeled and segmented with the juice reserved
  • ¼ cup brandy
  • Ice cream to serve

 Method:

  1. Place the sponge cake on the braai until lightly toasted.
  2. In a pan, melt the butter and the sugar.
  3. Add the orange juice and segments then bring to the boil.
  4. Add the brandy and flambé until all the alcohol is burned off.
  5. Spoon the oranges onto the sponge cake then top with a scoop of ice cream to serve.
