Josh’s Date Balls
Makes 32-35
Ingredients:
- 125g Stork Bake
- 250g pitted dates, chopped finely
- 1 egg
- ¼ cup Selati sugar
- 20 Marie biscuits, broken up
- 100ml fine desiccated coconut
Method:
- Melt the butter in a saucepan over low heat.
- Add the dates and stir until soft.
- Whisk the egg and sugar together. Add the dates and stir well.
- Remove from the heat and place the pan on a wooden chopping board
- Stir in the Marie biscuits and allow to cool.
- Put the coconut in a dish. Pinch off bits of the date mixture and roll into balls. Roll the balls in the coconut and leave on the chopping board until firm.
