Josh’s Date Balls

Makes 32-35

Ingredients: 

  • 125g Stork Bake
  • 250g pitted dates, chopped finely
  • 1 egg
  • ¼ cup Selati sugar
  • 20 Marie biscuits, broken up
  • 100ml fine desiccated coconut

 Method:

  1. Melt the butter in a saucepan over low heat.
  2. Add the dates and stir until soft.
  3. Whisk the egg and sugar together. Add the dates and stir well.
  4. Remove from the heat and place the pan on a wooden chopping board
  5. Stir in the Marie biscuits and allow to cool.
  6. Put the coconut in a dish. Pinch off bits of the date mixture and roll into balls. Roll the balls in the coconut and leave on the chopping board until firm.
