Kuku ya Mwamba (Smoked Chicken in Peanut sauce)

Serves 4
Ingredients:
- Cooking oil
- 1 large onion, chopped
- 1 tsp chopped garlic
- 2 stalks of celery, chopped (leaves & stalk)
- 2 red chilies thinly sliced
- 1 lemon, zested
- 500g smoked chicken, cut into pieces
- 1 tsp nutmeg
- Salt & pepper
- 4 Tbs smooth peanut butter
- 1 tin chopped tomatoes
- 1 cups of water
- 1 vegetable stock pot
- 1 bay leaf
Method:
- Heat oil in heavy based sauce pan; add onions and garlic then sauté until onions become translucent.
- Add celery, chillies and lemon zest then sauté for another minute.
- Add the chicken, nutmeg, salt and pepper then stir to combine.
- Add the peanut butter and stir to coat the chicken.
- Add the tomatoes, water, stock pot and a bay leaf.
- Simmer for 45 minutes.
- Serve hot with rice, pap and extra chilli.
