Kuku ya Mwamba (Smoked Chicken in Peanut sauce)

Serves 4

Ingredients:

  • Cooking oil
  • 1 large onion, chopped
  • 1 tsp chopped garlic
  • 2 stalks of celery, chopped (leaves & stalk)
  • 2 red chilies thinly sliced
  • 1 lemon, zested
  • 500g smoked chicken, cut into pieces
  • 1 tsp nutmeg
  • Salt & pepper
  • 4 Tbs smooth peanut butter
  • 1 tin chopped tomatoes
  • 1 cups of water
  • 1 vegetable stock pot
  • 1 bay leaf

 Method:

  1. Heat oil in heavy based sauce pan; add onions and garlic then sauté until onions become translucent.
  2. Add celery, chillies and lemon zest then sauté for another minute.
  3. Add the chicken, nutmeg, salt and pepper then stir to combine.
  4. Add the peanut butter and stir to coat the chicken.
  5. Add the tomatoes, water, stock pot and a bay leaf.
  6. Simmer for 45 minutes.
  7. Serve hot with rice, pap and extra chilli.
