300g Baby Cos Lettuce, washed and leaves separated
Place the packet of Enterprise bacon onto a plate topped with paper towel, then into the microwave and nuke for 3 minutes.
While the bacon cooks, place the parmesan, anchovies, egg yolks, garlic and seasoning into a blender and blend until smooth.
Slowly add the oil in a steady stream while blending until a thick emulsion has formed then stir in the lemon juice.
Once the bacon comes out of the microwave, leave to cool for a minute then open the bag and brush with the maple syrup before cutting into bite size pieces.
Toss the cos lettuce and croutons with the dressing then add the bacon pieces and toss again to distribute.
Plate up and top with some parmesan shavings
Tip: Make your own croutons by chopping up some stale ciabatta bread into small squares. Drizzle with some garlic oil and toss in some fresh thyme leaves. Season with salt and pepper then place onto an oven tray. Bake in a 180C oven until the croutons are golden and crispy. Leave to cool before adding to the salad.
