Midweek Roast Chicken Dinner
Serves 4
Ingredients:
- 1 whole chicken
- 4 Tbs Pakco Portuguese chicken seasoning
- 2 Tbs dried oregano
- 4 Tbs olive oil
- Salt and pepper
- 4 potatoes, peeled and chopped
Method:
- Preheat the oven to 200C and place in a large baking tray to pre-heat.
- Spatch cock the chicken by cutting out the backbone and discarding.
- Press the chicken down flat to make it one even thickness.
- In a bowl, mix together the Portuguese seasoning, oregano, olive oil and seasoning to taste.
- Rub the spice mixture all over the chicken then place, skin side up, onto the pre-heated baking tray.
- Season the potatoes with salt and pepper and add to the tray, scattering them in one layer.
- Roast the chicken for 30 minutes until the skin is crispy and cooked through.
