Mushroom and Feta Sandwich

Mushroom and Feta Sandwich

  • 6-7 black peppercorns
  • 1/2 tsp cumin seeds
  • 1/2 tsp of aniseed 
  • 4 cloves
  • 2 Tbs olive oil
  • 1 tsp of ginger, finely chopped
  • 1 medium onion, finely chopped
  • 1/2 tsp of turmeric powder
  • Salt to taste
  • 2 green chillies, finely chopped
  • 2 medium tomatoes, finely chopped
  • Coriander
  • ½ loaf sliced seeded bread

How To Make It: 

  1. Grind or pound the black peppers, cumin seeds, aniseed and cloves together.
  2. Heat the oil in a pan and sauté the ginger and onion for 2 mins.
  3. Mix in the ground spices, turmeric and salt.
  4. Add the tomatoes and green chillies and cook for 5 mins.
  5. Crumble the feta into the pan. Add the mushroom and mix well, garnish with coriander.
  6. Lightly toast the bread slices and make sandwiches with the filling, Slice in half and serve.
