Nacho Hot Dog
Serves 4
Ingredients:
- 2 ripe avocados, peeled, pitted and chopped
- 1 chilli, finely diced
- ¼ red onion, finely diced
- Juice of 1 lime
- 3 Tbs chopped coriander
- Salt and black pepper, to taste
- 4 Enterprise smoked viennas
- 4 hot dog buns, halved and toasted
- 1 cup grated mozzarella cheese
- 4 pickled jalapenos, drained and sliced
- 4 Tbs sour cream
- 4-6 Tbs Mexican tomato salsa
- Handful tortilla chips, coarsely crushed
Method:
- For the guacamole, combine the avocados, chilli, onion, lime juice and coriander in a bowl and mix until combined.
- Season with salt and black pepper.
- Heat a griddle pan until smoking hot and grill the viennas until blistered and golden.
- Place the viennas in the toasted buns and top with the cheese immediately so it melts.
- Top the cheese with the pickled jalapenos, sour cream, guacamole, tomato sauce and tortilla chips and serve.
