Nacho Hot Dog

Serves 4

Ingredients:

  • 2 ripe avocados, peeled, pitted and chopped
  • 1 chilli, finely diced
  • ¼ red onion, finely diced
  • Juice of 1 lime
  • 3 Tbs chopped coriander
  • Salt and black pepper, to taste
  • 4 Enterprise smoked viennas
  • 4 hot dog buns, halved and toasted
  • 1 cup grated mozzarella cheese
  • 4 pickled jalapenos, drained and sliced
  • 4 Tbs sour cream
  • 4-6 Tbs Mexican tomato salsa
  • Handful tortilla chips, coarsely crushed

 Method:

  1. For the guacamole, combine the avocados, chilli, onion, lime juice and coriander in a bowl and mix until combined.
  2. Season with salt and black pepper.
  3. Heat a griddle pan until smoking hot and grill the viennas until blistered and golden.
  4. Place the viennas in the toasted buns and top with the cheese immediately so it melts.
  5. Top the cheese with the pickled jalapenos, sour cream, guacamole, tomato sauce and tortilla chips and serve.
