No-Fuss Chicken Pies
Serves 4
Ingredients:
- 2 chicken breasts, poached and finely chopped
- 2 tsp Hinds chicken spice
- Hinds ground pepper
- 250g smooth cottage cheese
- 2 Tbs chives, chopped
- ¼ cup Pakco chilli and garlic sauce
- 16 slices soft white bread
- 100g butter, melted
- Black sesame seeds to sprinkle
Method:
- Preheat the oven to 200C.
- In a bowl, season the chicken with the chicken spice and pepper.
- Add the cottage cheese, chives and Pakco sauce and mix well to combine.
- Brush the butter on one side of each slice of bread.
- Place a spoonful of the filling onto 8 of the slices then top with the other 8 slices of bread (making sure the buttered sides are on the inside of the pie.
- Press the edges of the bread together to seal then cut using a pastry cutter to form round pies.
- Place the pies onto a baking tray then brush the tops with a little extra butter.
- Sprinkle the tops with black sesame seeds and bake for 20 minutes or until the bread is golden and toasted.
