No-Fuss Chicken Pies

Serves 4

Ingredients:

  • 2 chicken breasts, poached and finely chopped
  • 2 tsp Hinds chicken spice
  • Hinds ground pepper
  • 250g smooth cottage cheese
  • 2 Tbs chives, chopped
  • ¼ cup Pakco chilli and garlic sauce
  • 16 slices soft white bread
  • 100g butter, melted
  • Black sesame seeds to sprinkle

 Method:

  1. Preheat the oven to 200C.
  2. In a bowl, season the chicken with the chicken spice and pepper.
  3. Add the cottage cheese, chives and Pakco sauce and mix well to combine.
  4. Brush the butter on one side of each slice of bread.
  5. Place a spoonful of the filling onto 8 of the slices then top with the other 8 slices of bread (making sure the buttered sides are on the inside of the pie.
  6. Press the edges of the bread together to seal then cut using a pastry cutter to form round pies.
  7. Place the pies onto a baking tray then brush the tops with a little extra butter.
  8. Sprinkle the tops with black sesame seeds and bake for 20 minutes or until the bread is golden and toasted.
