Nulaid Bacon and cheese fancy dippers
4 rashers bacon, finely chopped
2 Cups mashed potato
2 Tbsp Spring Onions, chopped
1 Egg yolk (Nulaid Extra Large Egg)
¾ Cup Plain flour
40g Cheddar cheese, grated
1 ½ Cups Fresh breadcrumbs
1 Egg
¼ Cup Milk
Oil, for shallow-frying
2 Soft boiled eggs to serve

Step 1-Combine mashed bacon, potato, spring onion, egg yolk, cheese and 1/4 cup flour in a large bowl. Mix together to form a dough, and shape into thumb size pieces.
Step 2-Allow to chill in refrigerator for 20 minutes to firm up. Soft boil your eggs for 5 minutes and cool in water until use.
Step 3-Place remaining flour on a plate. Place breadcrumbs on another plate. Whisk egg and milk together in a shallow bowl. Roll croquettes in flour, shaking off excess. Dip in egg mixture. Coat in breadcrumbs.
Step 4- Shallow fry croquettes until golden brown. Drain on paper towel. Serve with soft boiled eggs and enjoy immediately!
