Oven Puff Cake
Serves 4
Ingredients:
- ½ cup cake flour, sifted
- 2 Tbs castor sugar
- 2 eggs
- ½ cup milk
- 1 tsp vanilla extract
- 30g butter
- Icing sugar, for dusting
- Vanilla ice cream and blue berries, for serving
Method:
- Preheat oven to 200C. Place an 18cm heavy-based frying pan (with an ovenproof handle) into the oven and heat for 20 minutes.
- Place the flour and caster sugar in a bowl and make a well in the centre.
- Add the eggs, milk and vanilla and whisk until smooth.
- Remove the pan from the oven, add the butter and swirl to coat the pan. Pour in the batter and return the pan to the oven.
- Bake for 25 minutes or until the cake is puffed and golden.
- Dust with icing sugar and serve immediately with scoops of ice cream and berries.
TIP This batter can be kept in the fridge until ready to bake.
