Peanut Roast 

 

Ingredients:

  • 250g whole shelled unsalted peanuts
  • 60g vegetable oil or olive oil
  • 2 onions, chopped
  • 4 large tomatoes, skinned, seeded and chopped
  • 2 small dessert apples
  • 1 Tbs pine nuts
  • 30g oat bran
  • 1 sun-dried tomato, chopped
  • 4 tsp chopped fresh sage
  • Sea salt & freshly milled black pepper
  • 1 egg
  • A little milk

 

Method:

  1. Preheat oven at 180C. 
  2. Prepare a 500g loaf tin by smearing it with butter. 
  3. Chop the peanuts roughly. 
  4. Heat the oil in a pan and add the onions. 
  5. Fry until light brown and add the tomatoes and apples and fry until softened. 
  6. Add the peanuts, pine nuts, oatmeal, sun-dried tomato, sage and salt and freshly milled pepper to taste. 
  7. Bind with the egg and sufficient milk to give a fairly moist consistency. 
  8. Press into the loaf tin and roast in the oven for about 50 minutes - slightly more if you want it browner on top.
  9. This is yummy served with a green vegetable or a salad.
