Peanut Roast
Ingredients:
- 250g whole shelled unsalted peanuts
- 60g vegetable oil or olive oil
- 2 onions, chopped
- 4 large tomatoes, skinned, seeded and chopped
- 2 small dessert apples
- 1 Tbs pine nuts
- 30g oat bran
- 1 sun-dried tomato, chopped
- 4 tsp chopped fresh sage
- Sea salt & freshly milled black pepper
- 1 egg
- A little milk
Method:
- Preheat oven at 180C.
- Prepare a 500g loaf tin by smearing it with butter.
- Chop the peanuts roughly.
- Heat the oil in a pan and add the onions.
- Fry until light brown and add the tomatoes and apples and fry until softened.
- Add the peanuts, pine nuts, oatmeal, sun-dried tomato, sage and salt and freshly milled pepper to taste.
- Bind with the egg and sufficient milk to give a fairly moist consistency.
- Press into the loaf tin and roast in the oven for about 50 minutes - slightly more if you want it browner on top.
- This is yummy served with a green vegetable or a salad.
