Peppermint Crisp Fridge Tart RECIPE BY MARGARET EDWARDS
Margaret is a 72 year old granny of 3 and sent us this simple recipe with a special story. This recipe is old and simple, but has a story. The recipe is the peppermint crisp and caramel desert, named by students in the 1970's as Transkei mud who were lodging with Missionary friends. The Lady, also a missionary took the recipe to the UK, and she plays tennis with Sir Cliff Richards, so she made some for him. Recently he was asked by an editor to give his favourite recipe for a book that's going to get published. He gave the "Transkei Mud " recipe as his favourite. Peppermint crisp was not readily available in the UK. In the "story" of the recipe he thanked the lady for the recipe. So when Margaret heard Expresso was looking for recipes this story came to mind.
Grate the chocolate. Whisk the cream with the sugar to form soft peaks. Spread half the caramel treat onto half of the biscuits then place next to each other in a shallow dish. Spread half the cream over the biscuits then sprinkle with half the peppermint crisp. Repeat the process, finishing with the peppermint crisp. Refrigerate, then enjoy.
