
Perfect Mashed Potato
Serves 4
Ingredients:
- 6 large potatoes (preferably Mondial or Avalanche varieties)
- 1/2 cup cream
- 50g butter
- Sea salt
How To Make It:
- Preheat the oven to 200C and place the potatoes in the oven for 45 minutes – 1 hour or until the potatoes are cooked through.
- Place the cream and butter into a saucepan and bring to the boil.
- Cut the baked potatoes in half and scoop the flesh out of the potato skins – do this while the potatoes are hot.
- Mash the potato flesh using a potato masher, or preferably through a vegetable mill or a sieve.
- Season the mashed potatoes with salt then add a little of the hot liquid and mix through until the desired consistency.
- Serve piping hot.
Top Tip:
- For a low fat version, substitute the butter for olive oil and the cream for milk.
- Always use fluffy potato varieties when making mash, the result is always a lighter and creamier mash.
