Perfect Mashed Potato

Perfect Mashed Potato

Serves 4

Ingredients: 

  • 6 large potatoes (preferably Mondial or Avalanche varieties)
  • 1/2 cup cream
  • 50g butter
  • Sea salt

How To Make It:

  1. Preheat the oven to 200C and place the potatoes in the oven for 45 minutes – 1 hour or until the potatoes are cooked through.
  2. Place the cream and butter into a saucepan and bring to the boil.
  3. Cut the baked potatoes in half and scoop the flesh out of the potato skins – do this while the potatoes are hot.
  4. Mash the potato flesh using a potato masher, or preferably through a vegetable mill or a sieve.
  5. Season the mashed potatoes with salt then add a little of the hot liquid and mix through until the desired consistency.
  6. Serve piping hot.

Top Tip:

-        For a low fat version, substitute the butter for olive oil and the cream for milk.

-        Always use fluffy potato varieties when making mash, the result is always a lighter and creamier mash.
