Poached Nectarines with Mascarpone
Serves 4

Ingredients:
- 4-6 Nectarines, ripe but still firm
- ¾ cup Selati Castor snow
- 4 cups water
- 1 vanilla bean, split, or 1 teaspoon vanilla paste
- 4 cardamom pods
- Mascarpone, to serve
Method:
- If you prefer you can keep the nectarines whole, but I like to cut half of them into wedges and simply halve the rest.
- Combine the sugar, water, cardamom and vanilla in a saucepan and allow to come to a boil.
- Carefully drop the nectarines into the boiling syrup and leave to simmer for 5 – 7mins.
- Remove the nectarines from the syrup and place into a bowl.
- Allow the syrup to cool to room temperature then pour over the nectarines.
- Place in the fridge to cool completely.
- Serve the cooled nectarines with dollops of mascarpone
