
Potato Cakes
Makes 4
Ingredients:
4 large potatoes, peeled and coarsely grated
60ml (4 Tbs) flour
5ml (1 tsp) baking powder
1 large egg
Salt and pepper
Oil for frying
4 slices Enterprise smoked ham
Cheese Sauce:
375ml (11/2 cups) milk
30ml (2tbsp) flour
5ml (1tsp) mustard powder
Pinch of white pepper
Pinch of nutmeg
500ml (2 cups) mature cheddar cheese, grated
Fresh parsley to garnish
How To Make It:
- Drain the potatoes, squeezing them with your hands.
- Add the flour and baking powder to the potato, mixing through. Add the egg and seasoning.
- Heat enough oil in a large frying pan to shallow fry the potato cakes. Divide the mixture into four and drop spoonfuls of potato mixture into the oil, flattening lightly.
- Fry until golden brown, turning once. Drain on paper towel.
- For the sauce combine all the ingredients, except the cheese and parsley, in a blender or food processor and blend till smooth.
- Place in a pot and cook stirring all the time till thickened then add the cheese and stir till melted.
- Top the potato cakes with a slice of ham and spoon the cheese sauce over the top.
- Garnish with parsley serve.
