Power Sandwich

Serves 1

 

Recipe by Hein Scholtz

Ingredients: 

  • 1 egg
  • Salt and pepper
  • Knob butter
  • 2 large slices rye bread
  • 2 slices mature cheddar cheese
  • 3 rashers bacon, fried or grilled
  • 1 tomato, sliced
  • Handful baby spinach leaves

Method: 

  1. Fry the egg, sunny side up and season with salt and pepper.
  2. Butter the slices of bread on one side.
  3. Turn the bread, unbuttered side up, then lay the cheese on top.
  4. Top the cheese with the bacon then the tomato slices and season.
  5. Slide on the egg and spinach leaves.
  6. Place the other bread slice on top, with the buttered side on the outside.
  7. Heat a pan then place the sandwich into the pan to toast the one side.
  8. Turn the sandwich over and toast the other side.
