Power Sandwich
Serves 1
Recipe by Hein Scholtz
Ingredients:
- 1 egg
- Salt and pepper
- Knob butter
- 2 large slices rye bread
- 2 slices mature cheddar cheese
- 3 rashers bacon, fried or grilled
- 1 tomato, sliced
- Handful baby spinach leaves
Method:
- Fry the egg, sunny side up and season with salt and pepper.
- Butter the slices of bread on one side.
- Turn the bread, unbuttered side up, then lay the cheese on top.
- Top the cheese with the bacon then the tomato slices and season.
- Slide on the egg and spinach leaves.
- Place the other bread slice on top, with the buttered side on the outside.
- Heat a pan then place the sandwich into the pan to toast the one side.
- Turn the sandwich over and toast the other side.
