Pretzel Frankfurter Rolls

Ingredients:

  • 1 cup warm water
  • 2 tsp instant yeast
  • Oil
  • 2 3/4 cups bread flour
  • 1 Tbs sugar
  • 1 tsp salt
  • 6 cups water
  • 1/3 cup bicarbonate of soda
  • 1 packet Enterprise Frankfurters
  • Mustard, for serving
  • Sour cream and chives dip, for serving

 Method:

  1. Preheat the oven to 220C.
  2. Mix the warm water, yeast, a drizzle of oil, flour, sugar and salt together and mix to form a dough.
  3. Knead the dough for about 10 minutes or until smooth and elastic.
  4. Form the dough into a ball, place in an oiled mixing bowl, covered and allow to rise in a warm place until doubled in size (about ½ hour).
  5. Once the dough has risen, punch it down to remove all the air and divide into 8 pieces. Form each piece into a long sausage and wrap around the Frankfurters. 
  6. Meanwhile bring the water to a boil and add the bicarbonate of soda.
  7. Boil 2-3 pretzel sausages for 2 minutes per side, remove with a slotted spoon, drain and place on a lined baking sheet. Sprinkle with salt and bake until golden brown for 10-12 minutes.
  8. Serve with mustard and sour cream and chives dip.
