Pumpkin Fritters With A Twist

Makes about 24 fritters

Recipe by Heleen Meyer

Ingredients: 

  • 500 ml mashed cooked pumpkin
  • 85–115 g (150–200 ml) cake flour
  • 5 ml baking powder
  • 2 eggs, beaten
  • 125 ml pecan nuts, coarsely chopped
  • Olive oil for frying

 

To serve

  • 1 slice feta cheese, crumbled
  • Ground cinnamon for sprinkling
  • Runny honey

Method: 

  1. Mix pumpkin, flour, baking powder, eggs and pecan nuts to form a pourable batter.
  2. Heat a little olive oil over a medium temperature in a frying pan. Pour spoon fulls of the batter in the pan and fry on both sides until golden brown and cooked.
  3. Drain on paper towel and keep warm while frying the rest of the pumpkin fritters.
  4. Layer pumpkin fritters in a serving dish with feta and sprinkle with cinnamon and drizzle with honey. Serve as a warm side dish or savoury snack.
