Pumpkin Fritters With A Twist
Makes about 24 fritters

Ingredients:
- 500 ml mashed cooked pumpkin
- 85–115 g (150–200 ml) cake flour
- 5 ml baking powder
- 2 eggs, beaten
- 125 ml pecan nuts, coarsely chopped
- Olive oil for frying
To serve
- 1 slice feta cheese, crumbled
- Ground cinnamon for sprinkling
- Runny honey
Method:
- Mix pumpkin, flour, baking powder, eggs and pecan nuts to form a pourable batter.
- Heat a little olive oil over a medium temperature in a frying pan. Pour spoon fulls of the batter in the pan and fry on both sides until golden brown and cooked.
- Drain on paper towel and keep warm while frying the rest of the pumpkin fritters.
- Layer pumpkin fritters in a serving dish with feta and sprinkle with cinnamon and drizzle with honey. Serve as a warm side dish or savoury snack.
