Quick Chicken Satay With Quick Peanut Sauce

Makes 24

Ingredients:

  • 6 chicken breast fillets
  • 24 wooden kebab sticks
  • 125ml (1/2 cup) coconut milk
  • 5ml (1tsp) green curry paste
  • 5ml (1tsp) ground turmeric
  • 15ml (1tbsp) fish sauce

 

Peanut Sauce: 

Ingredients:

  • 85ml (1/3 cup) peanut butter
  • 10ml (2tsp) sugar
  • 10ml (2tsp) chilli sauce
  • 90ml 6tbsp) butter
  • 2 cloves of garlic, crushed
  • Juice of 1 large lemon
  • 45ml (3tbsp) soy sauce
  • 185ml (3/4 cup) coconut milk

Method: 

  1. Cut the chicken breast into four strips lengthways.
  2. In a small pot bring the coconut milk, curry paste, turmeric and fish sauce to the boil. Set aside to cool completely.
  3. When cold marinate the chicken strips in the mixture for at least 30 minutes to one hour or even overnight if you have the time.
  4. Thread the piece of chicken onto a stick and cook under a preheated grill.
  5. For the sauce combine all the ingredients except the coconut milk in a small pan. Cook over a low heat stirring and then add the coconut milk. Serve as a dipping sauce with the chicken satay.
