Quick Chicken Satay With Quick Peanut Sauce
Makes 24
Ingredients:
- 6 chicken breast fillets
- 24 wooden kebab sticks
- 125ml (1/2 cup) coconut milk
- 5ml (1tsp) green curry paste
- 5ml (1tsp) ground turmeric
- 15ml (1tbsp) fish sauce
Peanut Sauce:
Ingredients:
- 85ml (1/3 cup) peanut butter
- 10ml (2tsp) sugar
- 10ml (2tsp) chilli sauce
- 90ml 6tbsp) butter
- 2 cloves of garlic, crushed
- Juice of 1 large lemon
- 45ml (3tbsp) soy sauce
- 185ml (3/4 cup) coconut milk
Method:
- Cut the chicken breast into four strips lengthways.
- In a small pot bring the coconut milk, curry paste, turmeric and fish sauce to the boil. Set aside to cool completely.
- When cold marinate the chicken strips in the mixture for at least 30 minutes to one hour or even overnight if you have the time.
- Thread the piece of chicken onto a stick and cook under a preheated grill.
- For the sauce combine all the ingredients except the coconut milk in a small pan. Cook over a low heat stirring and then add the coconut milk. Serve as a dipping sauce with the chicken satay.
