Quick Koeksisters

Makes 16

Syrup

Ingredients:

  • 500ml white sugar
  • 375g water
  • 15ml lemon juice

 

Dough

Ingredients:

  • 500g Sasko Quick Treats Scone mix
  • 90g Stork Bake
  • 1 extra-large egg
  • 140ml milk

 Method:

  1. Put the sugar and water into a pot over a medium heat and stir to dissolve.
  2. Simmer gently for 7-8 minutes. Take the pot off the stove and stir in the lemon juice. Refrigerate the syrup until ice cold.
  3. Make the koeksister dough by placing the scone mix in a bowl. Rub in the margarine.
  4. Mix the egg and milk together and using a butter knife, cut the egg mixture into the scone mix to form a soft dough.
  5. Roll the dough out and cut 10cm x 5cm rectangles out of the dough. Cut each rectangle into 3 strips, leaving the top of the rectangle uncut.
  6. Plait the koeksisters then deep-fry in batches until golden brown. Drain them well and drop immediately into the cold syrup.
