Quick Koeksisters
Makes 16
Syrup
Ingredients:
- 500ml white sugar
- 375g water
- 15ml lemon juice
Dough
Ingredients:
- 500g Sasko Quick Treats Scone mix
- 90g Stork Bake
- 1 extra-large egg
- 140ml milk
Method:
- Put the sugar and water into a pot over a medium heat and stir to dissolve.
- Simmer gently for 7-8 minutes. Take the pot off the stove and stir in the lemon juice. Refrigerate the syrup until ice cold.
- Make the koeksister dough by placing the scone mix in a bowl. Rub in the margarine.
- Mix the egg and milk together and using a butter knife, cut the egg mixture into the scone mix to form a soft dough.
- Roll the dough out and cut 10cm x 5cm rectangles out of the dough. Cut each rectangle into 3 strips, leaving the top of the rectangle uncut.
- Plait the koeksisters then deep-fry in batches until golden brown. Drain them well and drop immediately into the cold syrup.
