Quick and Easy Chocolate Eclairs

Serves 4

Ingredients:

  • 1 cup milk
  • 6 Tbs castor sugar
  • 1 tsp vanilla
  • 2 Tbs corn flour
  • 3 large egg yolks
  • 1 box boudoir biscuits
  • 90g melted dark chocolate

Method:

  1. Place the milk into a pot and bring to the boil.
  2. In a bowl, whisk together the sugar, vanilla, corn flour and egg yolks.
  3. Slowly pour the hot milk into the egg mixture while whisking.
  4. Return the entire mixture to the pot and heat gently until the mixture begins to thicken – stir continuously with a wooden spoon.
  5. Transfer the thickened custard to a bowl, cover with cling wrap and leave to cool completely. (Make sure the cling wrap touches the surface of the custard to prevent a skin from forming.
  6. Once cool, use a serrated knife to cut the biscuits in half horizontally.
  7. Spoon or pipe some cool custard onto one half of the biscuit then top with the other half of the biscuit.
  8. Drizzle over the melted chocolate and serve.
