Quick and Easy Chocolate Eclairs
Serves 4
Ingredients:
- 1 cup milk
- 6 Tbs castor sugar
- 1 tsp vanilla
- 2 Tbs corn flour
- 3 large egg yolks
- 1 box boudoir biscuits
- 90g melted dark chocolate
Method:
- Place the milk into a pot and bring to the boil.
- In a bowl, whisk together the sugar, vanilla, corn flour and egg yolks.
- Slowly pour the hot milk into the egg mixture while whisking.
- Return the entire mixture to the pot and heat gently until the mixture begins to thicken – stir continuously with a wooden spoon.
- Transfer the thickened custard to a bowl, cover with cling wrap and leave to cool completely. (Make sure the cling wrap touches the surface of the custard to prevent a skin from forming.
- Once cool, use a serrated knife to cut the biscuits in half horizontally.
- Spoon or pipe some cool custard onto one half of the biscuit then top with the other half of the biscuit.
- Drizzle over the melted chocolate and serve.
