Red Cabbage, Apple And Sausage Strudel
Ingredients:
- 450g red cabbage, shredded
- 125g Enterprise smoked bacon or cheese griller sausages, sliced
- 1 green apple, cored and finely chopped
- 2T cider
- 2T cider vinegar
- Olive oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 1 bay leaf
- Sprig of thyme
- Salt and pepper
- 6 sheets phyllo pastry
- Olive oil, for brushing
Method:
- Fry the smoked bacon or cheese griller sausages until golden and set aside. Add the oil to the pan and fry the onions until golden brown.
- Add the cabbage and stir well then add the bacon griller sausages, apple, garlic, bay leaf, thyme and seasoning. Stir fry for a few minutes.
- Add the cider and cider vinegar and simmer for 1-2 minutes. Remove the bay leaf, season to taste and allow to cool.
- Brush the phyllo sheets with the olive oil and layer on top of each other. Arrange the filling on the pastry. Fold the short sides over and roll up to form a strudel.
- Bake for 20 minutes or until crisp and golden brown. Allow to cool slightly before serving in slices.
