Roast butternut fritters Expresso

Roast Butternut Fritters
 
Recipe by Lizet Hartley
 
1 cup mashed roast butternut
1 egg
pinch of salt
4 tbs cake flour
1 tsp baking powder
pinch of cayenne pepper (optional)
vegetable oil, for frying
cinnamon sugar, to serve (simply mix normal white sugar with some powdered cinnamon to make cinnamon sugar)
 
Mix all the ingredients together. Drop tablespoons of the batter in a pan brushed with just a touch of oil. Cook over low heat until they’re golden and both sides and cooked in the middle. (NB: The heat needs to be quite low, if it is too high, the fritters will burn on the outside and still be raw in the middle.) Serve straight away while still warm dusted with a little cinnamon sugar.
