Salt Meringue Baked Chicken

Serves 4

Ingredients: 

  • 3 egg whites
  • 500 g salt
  • 1 whole chicken
  • 250 g butter softened
  • ½ bunch parsley, finely chopped
  • 5 cloves garlic, crushed
  • 15 ml (1 Tbs) Hinds BBQ spice
  • 2.5 ml (½ tsp) cayenne pepper
  • 10 ml (2 tsp) Hinds ground black pepper

Method:

  1. Whisk the eggs until soft peak stage and gradually add the salt and continue whisking to form stiff peaks.
  2. Cut the chicken down the middle along the back bone and remove, then flatten the chicken (spatchcock).
  3. In a bowl, combine the butter, parsley, garlic, BBQ spice, cayenne pepper and black pepper.
  4. Preheat the oven to 200C. Spread the butter mixture under the skin of the chicken.
  5. Place on a baking tray and spread the salt meringue mixture over the chicken to encase it making sure there are no gaps.
  6. Bake in the oven at 200C for 2-3 hrs.
