Salt Meringue Baked Chicken
Serves 4
Ingredients:
- 3 egg whites
- 500 g salt
- 1 whole chicken
- 250 g butter softened
- ½ bunch parsley, finely chopped
- 5 cloves garlic, crushed
- 15 ml (1 Tbs) Hinds BBQ spice
- 2.5 ml (½ tsp) cayenne pepper
- 10 ml (2 tsp) Hinds ground black pepper
Method:
- Whisk the eggs until soft peak stage and gradually add the salt and continue whisking to form stiff peaks.
- Cut the chicken down the middle along the back bone and remove, then flatten the chicken (spatchcock).
- In a bowl, combine the butter, parsley, garlic, BBQ spice, cayenne pepper and black pepper.
- Preheat the oven to 200C. Spread the butter mixture under the skin of the chicken.
- Place on a baking tray and spread the salt meringue mixture over the chicken to encase it making sure there are no gaps.
- Bake in the oven at 200C for 2-3 hrs.
