Sauté mushrooms and bacon on ciabatta with soft poached egg

Serves 1

1 slice of ciabatta
3 rashers streaky bacon, chopped
¼ onion, sliced
250g mixed mushrooms
1 egg
Splash of white vinegar

Toast the bread. Sauté the bacon, add the onion then the mushrooms. Poach the egg in boiling water and the vinegar. Place the mushrooms on the toast then top with the egg.
