Seared Tuna With Basil And Jalapeno Dressing

For the tuna:
Ingredients:
- 250 g tuna
- Salt and pepper
- Olive oil
For the salad:
Ingredients:
- 2 granny smith apples, fine julienne
- 2 limes, juiced
- 5 g Italian parsley, finely chopped
For the dressing:
Ingredients:
- 5 g basil leaves, blanched and refreshed
- 1 green jalapeno chilli, finely chopped
- 30 g ginger, finely chopped
- 20 ml soy sauce
- 2 lime juice
- 1/2 onion, finely chopped
- 80 ml olive oil
Method:
- Season the tuna with salt, pepper and olive oil, then sear off the tuna in a very hot pan.
- Finely julienne the apple, then toss in the lime juice and parsley.
- Blend together the basil, jalapeno, ginger, soy sauce, lime juice and onion until fine.
- Slowly drizzle in the olive oil while blending to form an emulsion.
- Slice the tuna thinly then serve drizzled with the dressing and the apple salad.
