Smoked Chicken Pies Makes about 10 pies
For the smoked chicken:
Ingredients:
- 1 whole chicken
- Salt and pepper
- Pot with a tight fitting lid
- 125 ml wood shavings or tea leaves
Method:
- Season the chicken with salt and pepper.
- Place a large pot on the stove, place wood shavings at the bottom of the pot and place a wire rack on top of the shavings.
- Place the chicken on a tin plate, close the lid and smoke chicken on high heat for 15 minutes.
- Turn down the heat and smoke for another 40 minutes until cooked.
- Take the chicken out of the pot and keep the juice aside, let chicken cool down.
- Remove the chicken from the bones and discard together with the skin.
For the pie:
Ingredients:
- 1 whole smoked chicken, shredded
- 250g mushrooms, chopped and fried until dry
- 300 ml white sauce
- 400g puff pastry, defrosted
- Flour for dusting
- 1 egg, beaten
Method:
- Pre heat the oven to 200 C and prepare a baking tray with non-stick cooking spray and baking paper.
- Mix the flaked chicken, mushrooms and white sauce together, add the juice from the chicken and season to taste with salt and pepper.
- Dust a clean surface with flour and roll out the pastry, cut into strips of the same size.
- Place a big spoonful of the filling on one half of the strip.
- Brush the sides with egg and fold the pastry over to close.
- Close the ends of the pie with a fork, place the pies on the prepared baking tray.
- Bake for 30 – 40 minutes until cooked and golden.
