Smoked Trout Omelette

Serves 6

 

Ingredients:

  • 6 eggs
  • Salt and pepper to taste
  • 1 fillets of smoked trout, thinly sliced or flaked
  • 50 g feta cheese, crumbled
  • 6 spring onions, finely chopped

 

Method:

  1. Whisk 6 eggs.
  2. Transfer to heated non-stick pan with 1 teaspoon olive oil.
  3. Place pieces of trout evenly in egg mixture into pan.
  4. Sprinkle feta cheese and half the spring onions on top.
  5. Cover the pan and reduce the heat. Let stand until egg is cooked through. You may need to finish off by putting the pan under the grill for a few seconds if egg does not cook properly on top.
  6. To serve, slice in wedges, serve with rye bread and sprinkle with remaining spring onions for garnish.
