Smoked Trout Omelette
Serves 6
Ingredients:
- 6 eggs
- Salt and pepper to taste
- 1 fillets of smoked trout, thinly sliced or flaked
- 50 g feta cheese, crumbled
- 6 spring onions, finely chopped
Method:
- Whisk 6 eggs.
- Transfer to heated non-stick pan with 1 teaspoon olive oil.
- Place pieces of trout evenly in egg mixture into pan.
- Sprinkle feta cheese and half the spring onions on top.
- Cover the pan and reduce the heat. Let stand until egg is cooked through. You may need to finish off by putting the pan under the grill for a few seconds if egg does not cook properly on top.
- To serve, slice in wedges, serve with rye bread and sprinkle with remaining spring onions for garnish.
