 Souvlaki with tzatziki

Souvlaki with Tzatziki

Serves 4 

For the souvlaki:

Ingredients:

  • 1kg chicken or pork or lamb, cubed
  • Salt and pepper
  • 1 lemon, zested and juiced
  • 4 Tbs olive oil
  • Sosatie sticks

 

For the tzatziki:

Ingredients:

  • 1kg thick Greek yogurt
  • 2 grated cucumbers (strained through a sieve)
  • 1 clove grated garlic
  • Salt to taste
  • 3 tsp olive oil (optional)

Method: 

  1. Season the meat with salt, pepper, lemon zest, juice and olive oil.
  2. Skewer the meat on the sticks then cook on the braai or in a hot griddle pan.
  3. Make the tzatziki by mixing the yoghurt, cucumbers and garlic in a bowl and seasoning with salt and olive oil.
  4. Serve the skewers with the tzatziki on the side.
