Spaghetti with Garlic Bread Crumbs
Serves 4

Ingredients:
- 15 cm of a white loaf, crusts removed
- 500g spaghetti
- 125ml extra-virgin olive oil
- 4 fat cloves garlic - sliced
- 1 Tbs fresh oregano – finely chopped
- 3 Tbs fresh flat leafed parsley – finely chopped
- 125g parmesan cheese
Method:
- Tear the bread into different shaped pieces about 1cm in size.
- For the 500g of pasta, you will need to fill a measuring cup 500ml in size.
- In a large pasta pot, bring water to a boil and salt it well. Cook the pasta until al dente.
- While the pasta is cooking, heat the oil in a frying pan over medium to high heat. Toss in the garlic slices and frizzle for a moment.
- Toss in the breadcrumbs and stirring all the while toast them until they are the garlic are a deep gold. If necessary turn down the heat in order to prevent the bread getting too dark.
- At the last moment toss in the oregano, and then lift the pasta out of the water and add it to the pan.
- If you like, you can add some of the cooking water or extra oil.
- When the pasta is well mixed with the breadcrumbs, toss in the parsley, sprinkle with the cheese and serve immediately.
