Sticky BBQ Ribs with Honey and 5-Spice Glaze

Ingredients:
For the rib marinade:
- 1.5kg pork cocktail ribs (Short ribs cut individually down each bone)
- 100ml rice wine vinegar
- 100ml soy sauce
- 100ml hoisin sauce
- Red chillies, sliced. Depends how hot you like it.
- Thumb size fresh ginger, peeled and sliced
- 100ml honey
- 5 star anise
- 30ml. sesame oil
- 1 small red onion, finely chopped
For the honey glaze:
- 150ml honey
- 1 Tbs Chinese five-spice
To garnish:
- Spring onions, sliced
- 2 red chillies, sliced
- Fresh coriander
Method:
- Mix all the ingredients for the marinade together and place in a large zip lock bag
- Marinade the ribs overnight in the fridge for best results, but a few hours will do.
- Place ribs and marinade in an oven tray and cover with foil
- Roast in a preheated oven at 190°C for an hour.
- Uncover the ribs after an hour toss the ribs in the pan juices.
- Now season the ribs with a little five spice and drizzle with the honey to glaze.
- Return to oven and roast for another half an hour.
- Do keep an eye on them as you don't want them to burn and each oven varies slightly as well.
- Remove from the oven and place the ribs on a platter
- Sprinkle with some sliced fresh spring onions, sliced chillies and fresh coriander
