Sticky Sausages In Beer With Coleslaw

Serves 4

Ingredients:

  • 15g butter
  • 4 onions, thinly sliced
  • 1 tsp sugar
  • 400g Enterprise Traditional Country Sausages
  • 1 Tbs flour
  • 1 sprig thyme                                                                                                       
  • 1 can beer
  • ½ cup beef stock
  • Splash of Worcestershire sauce

 

Coleslaw

Ingredients:

  • ½ small red cabbage, shredded
  • 1 carrot, peeled and grated
  • Handful mixed sprouts
  • 2 tsp horseradish cream
  • ½ cup mayonnaise
  • 1 Tbs lemon juice
  • 1 Tbs Dijon mustard

Method:

  1. Melt the butter and stir through the onions, cover with a lid and cook for 10 minutes or until softened. Remove lid, add sugar, then cook for 15-20 minutes or until golden and sticky.
  2. Fry the sausages for 15 minutes or until browned and keep warm. Add the onions, then flour and stir for 1 minute. Add thyme, beer and stock and simmer for 5 minutes. Add Worcestershire sauce, season and serve with sausages.
  3. Make the coleslaw by mixing all the ingredients together. Serve with the sausages.
