Stinging Nettle Soup
Ingredients:
- 1 generous knob of butter
- 1 medium onion chopped
- ½ cup rice
- 1L chicken or vegetable stock
- 200g stinging nettles
- Nutmeg
- 1 lemon
- Pinch of cape sorrel
- Dash of cream or plain yoghurt to garnish
Method:
- In a pot soften your onions in butter.
- Add stock and rice and simmer for about 15mins.
- Add nettles and nutmeg and simmer for another 2 mins.
- Blend with an immersion blender until smooth.
- Serve with a squeeze of lemon and a splash of cream or swirl of yoghurt.
