Stinging Nettle Soup

 

Ingredients:

  • 1 generous knob of butter
  • 1 medium onion chopped
  • ½ cup rice
  • 1L chicken or vegetable stock
  • 200g stinging nettles
  • Nutmeg
  • 1 lemon
  • Pinch of cape sorrel
  • Dash of cream or plain yoghurt to garnish

 

Method:

  1. In a pot soften your onions in butter.
  2. Add stock and rice and simmer for about 15mins.
  3. Add nettles and nutmeg and simmer for another 2 mins.
  4. Blend with an immersion blender until smooth.
  5. Serve with a squeeze of lemon and a splash of cream or swirl of yoghurt.
