Strawberry Scone Cake

Ingredients:

  • 500g Sasko Quick Treats Scone mix
  • 90g Stork Bake
  • 1 extra-large egg
  • 140ml milk
  • 1 punnet strawberries or other berries
  • 100g Selati castor snow
  • 500ml ready-made custard
  • 1 cup fresh cream, whipped

Method:

  1. Place the Sasko Quick Treats Scone Mix in a bowl and rub in the butter.
  2. In a separate bowl, whisk the egg and milk together.
  3. Using a butter knife, incorporate the egg mixture into the scone mixture to form a soft dough. Do not overmix.
  4. Spray or grease a large baking tray and press the dough out into a large circle on the tray, making an indentation in the middle.
  5. Bake in a preheated oven at 200C for 15-20 minutes until golden brown and cooked through. Cool on a wire rack.
  6. Toss the berries in the castor sugar. Pour the custard over the cake, arrange the berries on top, slice and serve with whipped cream.
