Tart Apple Yogurt Pudding
3 Tbs cold water 3 tsp gelatine 2 medium Red Delicious apple, peeled and chopped 2/3 cup plain Parmalat perfect pour yoghurt 1 cup sugar 4 tsp finely grated lemon zest 1 cup cream
1. Place the water in a small bowl and sprinkle the gelatin on top of the water, then set aside.
2. Puree the apple pieces, yogurt, lemon zest, and sugar in a food processor until smooth, then add the cream and puree until well incorporated.
3. Melt the gelatine mixture in a pan over low heat until dissolved, then pour into the apple mixture, and stir until mixed completely.
4. Pour the pudding into serving glasses and then place in the refrigerator to set for 1 to 2 hours.
