The Zola milk tart Expresso

The Zola milk tart
 
Recipe by Zola Nene (Taken from the South African Milk Tart Collection)


Pastry:
60 g butter, softened

¼ (50g) cup castor sugar
1 egg
1 cup (140g) cake flour
1 tsp baking powder
Pinch of salt
 

  1. Cream butter and sugar together and add the egg, beating well to combine.
  2. Add all the other ingredients – to form a stiff dough.
  3. Press dough evenly into a tart tin and up the sides.
  4. Dock the pastry base then blind bake at 180C for 30 min or until the pastry is golden and crispy.

 
Filling:
2 ¼  cups milk

1 cinnamon stick
1 egg
½ cup (100g) sugar
20 ml flour
20 ml corn flour
1 tsp vanilla
20 g butter
1 tsp (5ml) ground cinnamon
 

  1. Place milk and cinnamon stick into a pot and bring to the boil. Discard the cinnamon stick.
  2. In a bowl, whisk together the egg, sugar, flour, corn flour and vanilla.
  3. Pour the boiling milk into the egg mixture, while continuously whisking.
  4. Return mixture to the pot and cook on medium heat until thickened.
  5. Add the butter and stir through.
  6. Pour into the baked pastry shell and sprinkle with the ground cinnamon.
  7. Allow to cool completely cool at room temperature before storing in the fridge.
