Toad in the Hole
Makes 6
Ingredients:
Yorkshire Pudding Batter:
250ml (1cup) cake flour
2,5ml (1/2 tsp) baking powder
Pinch of salt
2 extra-large eggs
250ml (1 cup) very cold milk
65ml ice water
1 large onion, sliced
6 pork or beef sausages
15ml (1tbsp) oil plus extra
6 rashers of rindless streaky bacon
6 stalks of fresh rosemary
Method:
- First make the batter by combining flour, baking powder and salt in food processor or blender. Add the eggs and milk and blend until smooth and bubbly. Allow to stand in the fridge for an hour.
- Blend again adding the ice water.
- Combine the onion slices and sausages on a baking tray and pour over oil.
- Bake in a preheated oven of 180 degrees C for 15 minutes.
- When the sausages are cool enough to handle remove from the pan and wrap each in bacon tucking in a stalk of rosemary into the wrap.
- Spray a 6 hole mega muffin tray with cooking spray. Divide the cooked onion between the six holes.
- Pour a little splash of oil over the onion. Preheat the oven to 200 degrees C and place the muffin tray in the oven and bake for 5 minutes.
- Remove and place a sausage in each hole.
- Divide the batter between the muffin cups and return to the oven and bake for about 15 -20 minutes. Batter should have puffed up and be crisp. Serve with tomato sauce.
