Tofu or Tempeh Stir Fry

Serves 4

Ingredients:

  • 1 box Silken tofu or 350g Tempeh
  • Shao hsing wine or dry sherry
  • Soy sauce
  • A couple of drops of toasted sesame oil
  • 1 medium onion, cut into wedges
  • 2 medium carrots cut into matchsticks
  • 1 piece fresh broccoli cut into strips
  • 1 stick celery peeled and cut into diagonal slices
  • 2 large open brown mushrooms cut into thin slices
  • 3 Tbs sunflower peanut or canola oil
  • ½ tsp sugar
  • 4 Tbs Oyster Sauce
  • Soy sauce
  • Toasted sesame oil

 Method:

  1. Cut the tofu into large dice, or if using tempeh, cut it into slices. 
  2. Marinate in the Shao hsing wine [or dry sherry] a splash of soy sauce and a couple of drops of sesame oil while you prepare the vegetables. 
  3. Pour the oil into a very hot wok and add the onions, stir-fry for a while on their own and then add the remaining vegetables and stir fry until beginning to soften. 
  4. Add the tofu and the marinade and stir gently to heat through.
  5. Add the oyster sauce and season with more soy and sesame oil if necessary. 
  6. Serve of steamed white long grain rice.
