Tofu or Tempeh Stir Fry
Serves 4
Ingredients:
- 1 box Silken tofu or 350g Tempeh
- Shao hsing wine or dry sherry
- Soy sauce
- A couple of drops of toasted sesame oil
- 1 medium onion, cut into wedges
- 2 medium carrots cut into matchsticks
- 1 piece fresh broccoli cut into strips
- 1 stick celery peeled and cut into diagonal slices
- 2 large open brown mushrooms cut into thin slices
- 3 Tbs sunflower peanut or canola oil
- ½ tsp sugar
- 4 Tbs Oyster Sauce
- Soy sauce
- Toasted sesame oil
Method:
- Cut the tofu into large dice, or if using tempeh, cut it into slices.
- Marinate in the Shao hsing wine [or dry sherry] a splash of soy sauce and a couple of drops of sesame oil while you prepare the vegetables.
- Pour the oil into a very hot wok and add the onions, stir-fry for a while on their own and then add the remaining vegetables and stir fry until beginning to soften.
- Add the tofu and the marinade and stir gently to heat through.
- Add the oyster sauce and season with more soy and sesame oil if necessary.
- Serve of steamed white long grain rice.
