Vital Chilli Soy Sauce and Chocolate Cake

Ingredients:
- 120g chocolate
- 120g butter
- 2/3 cup sugar
- 15 drops Vital Chilli soy sauce
- 3 eggs, separated
- 1/3 cup ground almonds
- 130ml cake flour
- Pinch crushed chilli
- 1 Tbs castor sugar
For the chocolate glaze:
- 120g chocolate
- 2 Tbs hot water
- 1 Tbs coffee powder
- 5 drops Vital chilli soy sauce
- 4 Tbs butter
Method:
- Preheat oven to 180C.
- Line a cake tin with spray and cook.
- Melt the chocolate and leave to cool.
- Cream together the butter and 2/3 cups of sugar until light and fluffy.
- Stir in the egg yolks, melted chocolate, almonds, cake flour and chilli.
- In a separate bowl, whisk together the egg whites and the tablespoon of sugar until soft peaks from.
- Fold the egg whites into the cake mixture then pour into the cake tin.
- Bake in the preheated oven for about 25 minutes – the cake is done when a cake tester inserted in the outer area comes out clean (the centre will still be slightly moist).
- For the glaze, place all the ingredients into a bowl and melt gently over a Bain Marie.
- Pour the glaze over the cooled cake and let stand for 10 minutes before serving.
