WARM COUSCOUS WITH LENTILS, BROCCOLI AND FETA
Couscous is a coarsely ground semolina pasta. It is a good low-fat source of complex carbohydrate. No cholesterol.
To make couscous: Put the couscous into a bowl and pour over boiling water or stock, enough just to cover the couscous (equal quantities of both). Cover with cling film and leave for 5 minutes. Stir in a dash of olive oil, fresh lemon juice & salt & pepper to taste. Mix with a fork.
What to add to your Couscous 1 tin cooked lentils (purchase from woollies), rinsed and added to cooked couscous 1 handful of fresh coriander or mint chopped – add to couscous 1 head of broccoli – place in boiling water for 1 minute Feta cheese
This meal is packed with protein from the lentils and couscous and with added antioxidants from the Broccoli (Super food and helps prevent cancer) this is one very healthy meal.
Great side dish or own it’s own.
