Waterblommetjie and Tomato Bredie
Serves 4
- 2 onions, roughly chopped
- 100g smoked bacon, chopped
- 2 celery sticks, roughly chopped
- 2 carrots, roughly chopped
- 2-3 garlic cloves, finely chopped
- 1 chilli, finely chopped
- 350 g waterblommetjies, washed and soaked in salt water overnight (or 1 tin, drained)
- 1 tin chopped tomatoes
- 1 T lemon juice
- 1 t ground nutmeg
- 250 ml vegetable stock
- Salt and pepper, to taste
- Handful chopped parsley
How To Make It:
- Fry the onion, bacon, celery, carrots, garlic and chilli until translucent.
- Add the waterblommeties, tomatoes, lemon juice, nutmeg and stock then simmer over a low heat for 45 minutes until the waterblommetjies are soft – if using tinned waterblommeties, simmer for 20 minutes.
- Season to taste then add the parsley.
- Serve with white rice or pap.
