Waterblommetjie and Tomato Bredie

Serves 4

  • 2 onions, roughly chopped
  • 100g smoked bacon, chopped
  • 2 celery sticks, roughly chopped 
  • 2 carrots, roughly chopped 
  • 2-3 garlic cloves, finely chopped 
  • 1 chilli, finely chopped 
  • 350 g waterblommetjies, washed and soaked in salt water overnight (or 1 tin, drained)
  • 1 tin chopped tomatoes
  • 1 T lemon juice 
  • 1 t ground nutmeg 
  • 250 ml vegetable stock 
  • Salt and pepper, to taste
  • Handful chopped parsley

 

How To Make It:

  1.  Fry the onion, bacon, celery, carrots, garlic and chilli until translucent.
  2. Add the waterblommeties, tomatoes, lemon juice, nutmeg and stock then simmer over a low heat for 45 minutes until the waterblommetjies are soft – if using tinned waterblommeties, simmer for 20 minutes.
  3. Season to taste then add the parsley.
  4. Serve with white rice or pap.
