Woolworths Lemon and Herb Couscous Salad
500g couscous
1T freshly ground black pepper
Salt to taste
1T Woolies veg and potato seasoning
4T extra virgin olive oil
Enough boiling water to cover the couscous with an extra 3cm of water
The leftover carrots from the lamb roast, cut into chunks
The leftover roasted onions from the lamb roast, roughly diced
1 lemon, zested and juiced
The remaining juices from the lamb roast
3T roughly chopped parsley
3T roughly chopped basil
2T dill, roughly chopped
2T mint finely chopped
200g feta, crumbled or cut into cubes
Add the couscous to a large mixing bowl along with the pepper, salt and extra veggie seasoning. Drizzle over the olive oil before pouring in the boiling water and covering with a lid or plastic wrap, allowing the couscous to absorb the water for about 10 minutes. Fluff the couscous up using a fork, loosening the grains.
Add the chunks of carrot and onion along with the lemon zest and juice, the remaining juices from the lamb roast, the herbs and the feta. Fold all the ingredients together to combine and taste before adding extra salt and pepper if needed.
