Woolworths Plant Powered Protein Nuggets

1 box Woolworths Plant Powered Protein Nuggets
1 Woolworths Cauliflower
½ Cup Woolworths Almond Milk
1 tsp Woolworths Minced Garlic
1 Tbsp Woolworths Olive Oil
½ Cup Woolworths Baby Onions, blanched and cut in half
1 tsp Woolworths Italian Parsley, chopped
1 Lemon, zested
1 tsp Woolworths Minced Garlic
2 Tbsp Woolworths Olive Oil
Woolworths Micro herbs to garnish


Blanch the cauliflower in boiling salted water, until slightly softened. Remove from water and allow to steam slightly. Cut into florets, and place half into a pot with Almond Milk and Garlic.
Simmer Cauliflower puree for roughly 20 minutes, then blend until silky smooth. Season with salt.
Toss the remaining Cauliflower florets in Olive oil, salt and pepper. Dry fry in a non-stick pan until edges become charred and golden. Remove from pan, and repeat the process with the baby onions, flat side down.
To make the Gremolata Oil, simply combine the parsley, lemon zest, garlic and oil in a bowl. Set aside.
Cook the Woolworths Plant Powered Nuggets as per packet instructions, and set aside.


To assemble, start with a base of Cauliflower Puree. Arrange sausages, then the charred cauliflower and baby onions. Finish with a drizzle of Gremolata Oil and Woolworths Micro Herbs.
