Expresso brings you a breakfast recipe for Zucchini frittata

Zucchini frittata

 

Ingredients:

 

4 zucchini, finely chopped

4 eggs, beaten

1 Tbs butter

4 Tbs grated parmesan

 

How To Make It:


Fry the zucchini in the butter then add on in the beaten eggs. Place into a pre-heated oven and cook until set. Turn over onto a plate and serve.

 

Serves: 4
