BANANA with lime yoghurt

INGREDIENTS

6 Bananas, ripe
12 Rice paper, sheets
Juice of a quarter lime/lemon
500ml Yoghurt, fat free
2 tbls Castor sugar
Zest of one lime/lemon
Icing sugar to decorate

HOW TO MAKE IT

Soak the rice paper for 1 minute in cold water to soften.
Cut the ends of the bananas in half.
Cut each half in 4 strips.
Sprinkle with lime/lemon juice.
Place rice paper on soft cloth.
Place 4 pieces of banana in the centre of each rice paper.
Fold the rice paper closed, and frit in a non-stick pan till it’s crispy.
Mix the yoghurt, zest and castor sugar in a bowl.
Sprinkle the banana parcels with icing sugar and serve with yoghurt.
