INGREDIENTS

Serves 6-8
 
This is so rich that you could even serve 8-10
 
1 Camembert, firm, not yet ripe, preferably Dalewood.
250 ml (1 c) Mascarpone cheese or Philadelphia cream cheese.
Walnuts or whole toasted almonds, chopped
100 g Blue cheese, Gorgonzola-style
Figs, sliced and preserved
Honey

HOW TO MAKE IT

Split the cheese horizontally.
Mix together the blue cheese, cream cheese and a layer of mascarpone.
Mix the blue cheese onto the bottom half of the camembert.
Add half the walnuts and preserved figs on the bottom half.
Close with the top half.
Top with the remaining creamed cheese mixture and preserved figs and nuts.
Drizzle with honey or fig syrup.
Serve with water biscuits.
