GAMMON LEFTOVERS

INGREDIENTS 

Frittata filling:

 1 small Red onion, chopped
2 Garlic cloves, crushed and chopped
1 Yellow pepper, diced
2 small Courgettes, diced
1 cup Gammon, diced
12 Cherry tomatoes
Small handfull of parsley, finely chopped
6 Eggs, whisked
250ml Cream
One and a half cups mature cheddar, grated
1/2 cup Parmesan cheese, freshly grated

FOR THE GARNISH:

Rosemary sprigs, fresh
1 handful, Cherry tomatoes

HOW TO MAKE IT

Pre heat the oven to 180°C.
Spray a muffin tin with spray and cook.
Mix together the red onion, garlic, peppers, courgettes, gammon and parsley and divide it between the muffin holes.

Whisk together the eggs and cream.
Stir in the cheese.
Spoon into the muffin tins and bake for 15 minutes or until golden, puffed up and cooked through.
