ICED BERRY TERRINE

Iced Berry Terrine

*Pair your terrine with a delicious, crisp white wine from the Odd Bins range.

INGREDIENTS

1x Pannetone or large Madeira Sponge
300g Strawberries, ripe
300g Blueberries, ripe
300g Raspberries, ripe
2 Litres of Vanilla Ice-cream

HOW TO MAKE IT

Line a 900g loaf tin with cling wrap and make sure it overlaps the sides of the tin so that you can fold it over the dessert.

Place a layer of vanilla ice-cream into the base of the tin. Onto that, place a few thin slices of Pannetone or sponge and cover with one row of strawberries.

Next, place a row of blueberries and on top of that a row of raspberries. Cover the berries with vanilla ice-cream and continue with these layers until the loaf tin is full. Press down to make sure you seal all the holes.

Fold the cling wrap over the top.

Place the loaf tin in the freezer and freeze until hard.

THE TOPPING

250g Raspberries, frozen
200g Blueberries, fresh or frozen
200g Strawberries, sliced
1 tbls Icing sugar

Remove the terrine from the freezer 15 minutes before serving. Dip the base of the loaf tin in warm water to unmould it. Place onto a platter and top with the berries and a good shake of icing sugar.

Tip

Slice the terrine with a knife dipped in hot water.
