LAMB SISTERS with apricot and coriander relish

certified natural lamb

 

INGREDIENTS

1 x 1.5 kg Certified Natural Lamb leg, de-boned
3 tbls Olive oil
Salt and freshly ground black pepper
3 Garlic cloves, crushed
2 tbls rosemary needles, finely chopped
2 tsp Toasted cumin, roughly ground
1 tsp Paprika
half tsp Cinnamon, ground
Zest of 1 lemon

HOW TO MAKE IT

Butterfly the deboned leg of Certified Natural Lamb and cut it into 36
strips.

Place the lamb strips into a glass bowl and add all the remaining
ingredients then coat the lamb strips in the spices.

Take 3 strips and twist or plait together, secure each end with a toothpick.

Place some olive oil in a non-stick pan and fry the lamb sister on both sides until golden and deliciously cooked the way you like them. 

APRICOT RELISH

1 tbsp Cumin seeds, dry roasted (optional)

1 tbsp Fennel seeds, dry roasted (optional)

2 tsp Coriander seeds, dry roasted (optional)

1 tsp Seaweed salt
Black pepper, freshly ground
